Lemon 7 Up Pound Cake

Ingredients:

From Scratch Ingredients:

5 eggs

3 cups self-rising flour

3/4 lb butter, softened (3/4 LB of butter equals 3 sticks)

3 cups sugar

2 tablespoons lemon Juice (real or squeeze kind is fine) or extract if you want a deeper lemon flavor

3/4 cup carbonated lemon-lime beverage, any brand

Ingredients using Box Cake Mix

one box of yellow cake mix

4 eggs

3/4 cup of vegetable oil

1- 4-ounce box of instant lemon pudding

3/4 cup of carbonated lemon-lime soda of your choice/any brand

Lemon Glaze Ingredients:

1 cup powdered sugar

2 tablespoon lemon juice

1 teaspoon of milk

Instructions:

From Scratch Directions:

Mix butter and sugar together for about 10 minutes.

Add in your eggs-1 at a time, beating after each is added in.

Add in flour and lemon extract/juice.

Fold in your lemon-lime soda of choice.

Pour into well-greased 12-cup Bundt pan

Bake at 325 degrees for 1 to 1 hour & 15 min or until fully set

Remove from oven and transfer to wire rack to cool, then drizzle your glaze on top

Directions using Box Cake Mix

Preheat your oven to 325F

Grease your bundt pan

In a separate large bowl combine all the cake ingredients, plus pudding and the soda and mix well

pour the mixed batter into the greased bundt pan

Bake for about 45 to 55 minutes or until set

allow cooling completely before removing from the pan

top with Glaze

Make Lemon Glaze-

Both recipes from scratch and from the box mix use the same easy, delicious glaze

Mix powdered sugar and lemon juice and milk together and drizzle on cooled cake one removed from the pan.

Cheesy Chicken Casserole

INGREDIENTS

•                                      1 can of Cream of Chicken Soup

•½ cup milk

•1 cup light sour cream

•2 cups of cooked chicken

•12 ounce bag of egg noodles cooked

•Pinch of salt

•¼ teaspoon ground black pepper

•1 1/2 Cups of Cheddar Cheese

•15 Ritz Crackers Crushed

•2 Tablespoon of Butter - melted

INSTRUCTIONS

In a bowl combine the following together - soup, sour cream, milk, salt, pepper, chicken, and egg noodles

Spread mixture into a medium size casserole dish

Sprinkle crushed crackers on top of the mixture - drizzle butter over the crackers

Top with cheese

Cook uncovered at 400 for

 

Cake Mix Cinnamon Coffee Cake

Melt-in-your-mouth moist french vanilla cake swirled with cinnamon and topped with a light cinnamon streusel and topped with a vanilla icing glaze is the perfect Coffee Cake.

Ingredients

•        1 French Vanilla Cake Mix (or yellow cake mix)

•        1 - 3/4 oz. package of instant french vanilla pudding mix

•1/4 cup warm water

•1 cup sour cream

•3/4 cup vegetable oil

•4 eggs

•1 teaspoon imitation butter flavoring

•       

Cinnamon Filling

•3 Tablespoons Brown Sugar

•2 teaspoons sugar

•2 teaspoons cinnamon

        

Streusel Topping

•1/4 cup flour

•1/4 cup packed brown sugar

•1/4 cup sugar

•1 - 1 1/2 Tablespoon melted butter

Option:

Brown Sugar Icing to Replace Streusel and Vanilla Icing:

1/2 cup flour

1/2 cup brown sugar

1/2 cup light brown sugar

3 tablespoons melted margine

•       

Vanilla Icing

•1/2 cup powder sugar

•1/2 Tablespoon Milk

•Splash vanilla extract

Instructions

1.Preheat oven to 325°. Prepare bundt pan by spraying with non-stick baking spray with flour.

2.In the mixing bowl of your mixer, add cake mix, pudding mix, 1/4 cup warm water, 1 Cup Sour Cream, 4 eggs, 3/4 cup of vegetable oil, and 1 teaspoon of imitation butter flavoring. Mix on low speed for 1 minute. Increase speed to medium and mix for 3-4 minutes until batter is creamy and smooth.

3.Spread half of cake batter in bottom of prepared bundt pan.

4.In a small bowl mix together all the cinnamon filling ingredients.

5.Sprinkle with Cinnamon Filling mixture making sure to spread it evenly.

6.Top with remaining cake batter. Use a spatula to spread evenly.

7.In another small bowl mix together dry streusel ingredients. Slowly add melted butter. Use hands to form small pea size crumble.

8.Sprinkle top of cake with half of streusel mixture. Reserve remaining half and set aside.

9.Place cake in center of rack in the middle of the oven.

10.Bake for 50-55 minutes. Half way through baking, carefully slide out oven rack with cake and sprinkle with remaining streusel. Continue baking until when you touch center of cake it springs back.

11. Remove cake from oven and cool completely.

12. In a small bowl mix together vanilla glaze ingredients. Mix until smooth. Remove cake from pan. Drizzle with vanilla icing.
