UT Extension Lincoln County is holding a two-day Canning College on Wednesday, June 26, and Thursday, June 27, from 12:30 until 4:30 p.m. each day in the Ralph Hastings Building auditorium, adjacent to the Extension Office.
Recommended preservation techniques for hot packing apples, canning low-acid vegetables, making pickles, canning tomatoes and making jelly will be taught during the two-day workshop.
Participants will learn how to use both a boiling waterbath canner and a pressure canner, as well as how to check a pressure canner gauge. Emphasis will be placed on preserving foods safely at home to avoid potential illness.
There is a $30 registration fee which will include a canning book, a food preservation notebook and the cost of jars and produce. Also, each participant will take home samples of their canning efforts. In order for organizers to be able to purchase adequate supplies, they are requesting that the fee be paid in advance.
